Upma is a delicious Rava-based South Indian breakfast meal. In this classic cuisine, roasted Rava is cooked in water flavoured with ghee (or oil), cashews, urad dal (lentils), onion, and other herbs and spices.
This hot breakfast dish can be turned vegan by replacing the ghee with oil. This upma is filled with warmth, flavour, and sweetness.
Ingredients
Directions

Heat Oil in a heavy pan
Add cashews, seeds, urad dal and fry on a low heat till golden
Add the green chillies, curry leaves and onion. Stir and saute until the onions are pink
Add the semolina and stir continuously till the semolina gives out a nice aroma. Add the salt and stir
Carefully pour in 2 cups of boiling water and stir well
Use a long handled ladle for sirring to keep away from spluttering
If it feels too dry, add more water and stir. Keep on slow gas and simmer for 2-3 minutes.
Add ghee and lemon juice and add corriander

Mould into greased cup and unmould into a serving plate
Serve hot with steaming hot or tea
Can accompany with green chutney or tomato ketchup
Conclusion
You can add vegetables like green peas, carrots and capsicum to the upma to make it even more healthier
